  • Chicken breasts: We always have a big stash of boneless skinless chicken breasts in the freezer, so that’s what I use in most of my soups and stews. You can swap these for boneless skinless chicken thighs or even precooked, chopped chicken if you have some on hand (maybe you made a big batch of this Crockpot Shredded Chicken?)
  • Vegetables: I stuck with classic vegetables like potatoes, carrots, celery, onion, and garlic. I used red potatoes, but baby potatoes or yellow potatoes would also work! You can peel them if you like, but I left the skin on for some extra fiber. 
  • Seasoning: I kept it simple with dried parsley and Italian seasoning, but you can play around with any other seasonings that pair well with that tangy Parmesan flavor!
  • Chicken broth: I always go for low sodium chicken broth to control the amount of salt in the recipe! If you don’t have low sodium broth, just omit the salt in the recipe. 
  • Cream: Heavy cream will give you the thickest stew and richest flavor, but you can swap this out for any cream you have on hand.
  • Parmesan: Adds a nutty, salty! You can swap it for another type of cheese, but we love the flavor of parmesan cheese.

This stew is mostly hands-off, while the slow cooker does the rest! Don’t forget to check the recipe card for the full list of instructions. 

  • Whisk together the broth and cornstarch.
  • Add potatoes, carrots, celery, onion, and garlic to the slow cooker. Sprinkle in the seasonings.
  • Pour the broth and cream into the slow cooker and mix everything together.
  • Place the chicken breasts in the slow cooker, pressing them down slightly into the liquid.
  • Remove the chicken from the slow cooker, then stir it back into the stew.
  • Add the peas and Parmesan cheese, then stir until everything is well combined.

Variations and Substitutions

  • Veggies: You can leave some veggies out if your family doesn’t enjoy them, or add in extra! The only thing you need to keep in mind is that some are best added at the beginning (the ones that take a long time to cook), and some are best added at the end, like green beans, frozen vegetables, chopped spinach, or kale.
  • Cheese: While Parmesan gives this stew its signature flavor, you can experiment with other hard cheeses like Pecorino Romano, Asiago, or even a mild cheddar. Just keep in mind that the flavor profile might change slightly, but it’ll still be delicious!
  • Herbs: I used dried parsley, but you could use fresh parsley if you like! Just use 3 times more than the dried amount and add it towards the end of cooking! If you use rosemary or thyme, you can add them when you add the seasonings to the slow cooker.

How do I store Garlic Parmesan Chicken Stew?

Store any leftovers in an airtight container in the fridge for 3-4 days. 

Reheat the stew on the stove over low heat until warmed through. You can also reheat it in the microwave. Just be sure to stir halfway through!

This hearty soup is a meal in itself, but I love pairing it with a big chunk of crusty Artisan bread to soak up that creamy broth!

Ingredients

  • 1 lb red potatoes (cut into ½" pieces)
  • 2 large carrots (peeled and thinly sliced)
  • 1 rib celery (chopped)
  • ½ medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • teaspoon salt*
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • cups low sodium chicken or vegetable broth
  • 2 tablespoons corn starch
  • cup heavy cream
  • 3 boneless skinless chicken breasts (about 1.5 lb)

Instructions

  • In a small bowl, whisk together the broth and cornstarch and add to the slow cooker along with the cream.
  • Add the chicken and press down slightly into the liquid.
  • Cover and cook on low for 6 to 7 hours, or until the potatoes are tender. (This could take longer, depending on the temperature of your slow cooker. If you want to reduce the cooking time, cut the potatoes smaller.)
  • Remove the chicken from the slow cooker and chop or shred. Stir back into the slow cooker with the peas and Parmesan, then taste and adjust seasonings as desired.
  • Serve immediately. I recommend crusty bread for dipping—the best way!

*I have cooked this stew on the stove top and it works just as well! If you’re in a hurry, simmer everything except cream, corn starch and Parmesan in a large pot until potatoes are tender. Combine cream and corn starch and stir into the pot with the Parmesan, continue cooking until thickened.

  • Oil: Use a neutral oil to brown the beef. 
  • Beef stewing meat: Beef stew meat is typically a tougher cut, like a chuck roast, that becomes tender and flavorful after slow cooking! You can also use ground beef, but make sure to cook it with the onions and drain any fat before adding it to the soup.
  • Aromatics: Onion and fresh garlic add so much flavor to this soup! If you’re in a pinch, you can use onion and garlic powder, but fresh is always best, in my opinion. 
  • Italian seasoning: adds a lot of flavor with just one spoonful.
  • Veggies: Carrots and celery are common soup veggies that add flavor and color!
  • Pearled barley or pot barley: Barley is a chewy, hearty grain that soaks up the flavors of the broth.
  • Tomato paste: Adds a depth of flavor and helps thicken the soup slightly.
  • Bay leaves: Add an aromatic, slightly floral flavor. 
  • Low sodium beef broth: Forms the base of the soup! I always opt for low sodium broth so I can control the salt content.

How to make Crockpot Beef Barley Soup:

  • Brown the beef in batches, then transfer to the slow cooker.
  • In the same pan, cook the onions until soft, scraping up any browned bits.
  • Add garlic, salt, Italian seasoning, and pepper, and cook for another minute.
  • Add carrots, celery, barley, tomato paste, and bay leaves to the slow cooker. Cook on low until everything is tender.

Tips and tricks:

  • You can mix up the veggies here to suit your family’s tastes. You can leave some out or add in other favorites: bell pepper, spinach, mushrooms, kale, or throw in frozen peas or corn before serving.
  • Normally, I’m not about adding extra steps to recipes. But in this case, I decided to brown my meat before adding it because it seals in the juices, and I think you will end up with a better texture to the meat after cooking for so long. It also adds extra flavor to the soup! You can skip this step if you need to.
  • Sometimes, slow cooker recipes can lack a little “oomph” by the end of cooking time — they are a little bland. You can add in a small amount of balsamic vinegar or even a little ketchup (don’t judge! It’s sweet, tangy, and savory). You can really punch up the flavor! Feel free to taste and adjust as you go — everyone’s tastes are different!

How to store leftover soup:

You can store leftover soup in an airtight container in the refrigerator for up to 4 days.

Because this soup is made with barley, it freezes perfectly! You can freeze it all together or in individual servings in an airtight freezer-safe container or in zip-top freezer bags.

Freeze for up to 3 months, and just place it in the fridge overnight to thaw before reheating.

This savory soup is the perfect meal to serve with crusty bread or dinner rolls! They’re so delicious dunked into the soup to soak up all that delicious broth.

  • 1 tablespoon oil
  • 1 lb beef stewing meat
  • 1 small onion finely diced
  • 2 teaspoons minced garlic

  • 3 large carrots peeled and chopped
  • 2 ribs celery chopped
  • 1/2 cup pearl or pot barley rinsed

Instructions

  • Heat a large pan over medium-high heat. Add oil and let heat 1 minute.
  • Brown meat in batches (allowing space around each piece) medium-high heat. Remove from pan and place in a 4-6 quart slow cooker.
  • Add onions to the saute pan and cook over medium heat until translucent — they will pick up all the brown bits left by the meat! Stir in garlic, salt, Italian seasoning and pepper and cook 1 minute.
  • Add the onions to the slow cooker on top of the beef, along with the carrots, celery, barley, tomato paste and bay leaves. Stir well, and then stir in the beef broth.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until vegetables and barley are tender.
  • Stir in fresh parsley as desired and season to taste. Serve.

Ingredients

  • 1 tablespoon oil
  • 4 large yellow onions
  • ¼ cup salted butter
  • 1 tablespoon brown sugar
  • teaspoons salt
  • ½ teaspoon dried thyme
  • ¼ teaspoon pepper
  • teaspoon red chili flakes
  • 5 cups low sodium beef broth
  • cup dry white wine (or sub additional broth)
  • 1 bay leaf
  • 4 thick slices French bread or 8 slices baguette
  • 2 tablespoons salted butter
  • 1 cup shredded cheese (Gruyere, Mozzarella, Gouda, Swiss, Parmesan, Asiago, etc. — a combination if possible)

Instructions

  • Heat the oil in a large skillet over medium-high heat.
  • Slice the onions thinly (I like to cut shorter slices — from a quarter onion rather than a half — so they fit more nicely on the soup) and add to the skillet.
  • Cook and stir until softened and starting to brown, about 10 minutes.
  • Add the butter, brown sugar, salt, thyme, pepper and red chili flakes. Cook and stir until beginning to caramelize, about 5 minutes.
  • Place the onions in a 3-4 quart slow cooker and stir in the broth, white wine (or sub broth) and bay leaf. Cook on low for 6-8 hours.
  • Just before serving, preheat the oven to 425℉. Lightly butter both sides of the bread slices, and place on a parchment lined baking sheet.
  • Place in the oven and toast for 3-4 minutes, then flip and top each with cheese. I like to use 2-3 cheeses for the best flavor, but the kinds you use are very customizable. If adding hard cheeses, I recommend only a small sprinkling of those along with a good melting cheese.
  • Bake for 3-4 minutes, until toasted and golden.
  • Taste soup and adjust seasonings as desired. Ladle into four bowls and top with toasted bread slices. Serve.

This easy and flavorful Chicken Stew is made in one pot with chicken thighs or breasts, potatoes, carrots, and onions with a rich and creamy sauce. It’s easy dinner meets comfort food, perfect any time of year!

If there’s any meal that will warm you right through, it’s this easy and hearty Chicken Stew! (My kids would be so thrilled with my unintentional rhyme 😉 )

Sure, we love all one pot meals here — you can’t beat a delicious meal that comes together with minimal pots. Those beasts can take forever to scrub!

But this Chicken Stew is special enough for a Sunday dinner with family, and just as welcome after a busy day of school or work.

Stew is one of those recipes that gives you a lot of flexibility, so don’t be afraid to reach deep into the back of your vegetable drawer and throw in a few additions you just need to get out of the fridge.

Tips for making the BEST chicken stew you’ve ever had:

  • Chicken Thighs over Chicken Breasts: It’s true that most of my chicken recipes here call for chicken breasts. They’re lean, easy to cook and often go on sale. But chicken thighs have a richer flavor, and for this chicken stew, that is exactly what we want.
  • Brown the chicken first: browning the chicken adds a ton of flavor (and if you want to maximize that flavor and you’re not lazy like me, use skin on chicken). It’s actually okay if the chicken sticks a little when you’re browning — there should be some bits on the bottom that will be soaked up into the sauce to give it big flavor. However, we don’t want to cook it too much so that it becomes tough!
  • Use a dutch oven if you have one: an enamel coated, cast iron dutch oven conducts heat incredibly well, and is my favorite vessel for cooking something like soup or stew.
  • Simmer it slow: We want a low bubble in the dutch oven, not a rolling boil. You will bring your broth up to a simmer over medium-high heat, then reduce to low and cover, cooking until everything is tender. Cooking stew too quickly can result in tough chicken.

Variations on this easy Chicken Stew recipe:

  • Swap the chicken: you can easily swap the thighs for breasts and all will be well. You can even get a little more creative and swap the chicken for really any protein, or none at all, and leave it vegetarian.
  • Swap the vegetables: carrots, onions and celery (called a mirepoix), along with the chicken, make up the flavor base for this stew and many other soups, stews, and other recipes. You can always swap them for others, or add in additional vegetables if you need to get them out of the fridge.
  • Adjust the seasoning: the herbs and spices used here are traditionally used in chicken stew, but that doesn’t mean you can’t improvise 😉 Dive into your spice cupboard and see what inspires you!
  • Swap the last ½ cup of broth for cream for a luxuriously creamy chicken stew.

Ingredients

  • 2 tablespoons canola oil
  • 6 boneless skinless chicken thighs
  • 3/4 lb Little Potatoes (quartered)
  • 2 large carrots (peeled and sliced)
  • 2 ribs celery (sliced)
  • 1/2 medium onion (finely diced)
  • 1 teaspoon minced garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 3 cups low sodium chicken broth, divided
  • 2 tablespoons corn starch
  • fresh parsley for garnish

Instructions

  • Heat oil in 4 quart dutch oven or soup pot over medium-high heat.
  • Add chicken thighs and cook for 2-3 minutes per side, just until lightly browned. Remove from the pot and set aside.
  • Add the potatoes, carrots, celery and onion and cook for 5-6 minutes until beginning to soften.
  • Add garlic, salt, parsley, thyme, pepper, and bay leaf. Stir and cook 1 minute.
  • Add 2.5 cups of chicken broth to the pot and scrape the bottom well to remove any browned bits. Bring to a simmer over medium-high heat.
  • Add the chicken thighs back to the pot, pressing them down into the liquid.
  • Cover and reduce heat to low. Simmer for 15-20 minutes, until potatoes and carrots are tender.
  • Remove chicken and shred.
  • Whisk together remaining half cup broth and corn starch and add back into the pot with the chicken.
  • Cook for 2-3 minutes until slightly thickened. Serve with fresh parsley if desired.

How to prep this Chicken Stew ahead:

Another thing we love about this chicken stew is how easy it is to prep ahead.

It refrigerates perfectly (I don’t generally recommend freezing potatoes, so I would keep this stew out of the freezer) for up to 3-4 days, provided your ingredients are fresh when you start.

Cook the stew completely, then let cool briefly at room temperature (not more than 1 hour), then cover and refrigerate.

To reheat, simply place the pot on the stove top over medium-low heat, and stir often until warmed through.

How to make it in the Crockpot:

To make this stew in the crockpot, you can brown the chicken and vegetables and deglaze, then add to the crockpot with the remaining ingredients, or you can simply skip the browning and throw everything in.

I prefer to cook chicken in the slow cooker in wholes rather than pieces, so I recommend cooking the stew with whole thighs for 4-5 hours on low until everything is cooked through, then remove the thighs to shred or chop.

How to make it in the Instant Pot:

Making this chicken stew in the Instant Pot is just as easy!

You can follow the original steps to brown the chicken and deglaze right in the Instant Pot on saute, then add in the remaining ingredients.

Pressure cook on high for 4 minutes if your chicken is chopped, or 8 minutes if your chicken thighs are whole.

Cooking ribs can be intimidating, but it doesn’t have to!

These Slow Cooker Ribs turn out flavorful and juicy every time, but without all of the hard work.

My husband will happily slave over a rack of ribs on the grill or the smoker but me? I prefer the easy way out and always use my crockpot or make these Instant Pot Ribs!

Why we love these BBQ ribs:

  • Crockpot Ribs are an awesome way to segue from Spring to Summer. You can have all of that summer barbecue flavor, without all of the work!
  • When it’s too hot to even think about cooking, the slow cooker takes all of the work out and keeps the house cool!
  • They’re tender, with the meat easily pulling off the bone but not mushy and falling apart. I wanted a good crust of intense flavor and a sweet, sticky barbecue sauce coating.

To be completely honest, I think these are the best ribs I’ve ever made.

The husband gave them “two meaty thumbs up” (<— his words, as he was stuffing his face), and even my kids liked them!

How to make the best Crockpot Ribs:

  1. Remove the membrane from the back of the ribs: this isn’t 100% necessary but it does keep the ribs from becoming tough. See a video tutorial here.
  2. Opt for baby back ribs when you can — they have a thicker layer of meat!
  3. Season well on all sides — take the time to really rub that spice blend in for maximum flavor!
  4. Cook until tender and brush with barbecue sauce to serve.

How long do you cook ribs in the slow cooker?

The exact cook time will depend on the size of your ribs, and the exact cooking temperature of your slow cooker.

Because all slow cookers are different, this can be difficult to pinpoint but thankfully ribs are really forgiving in the crockpot.

I usually cook mine for 8 hours on low or 4 hours on high and they are falling off the bone and juicy.

If you want them not to be quite so tender because you are throwing them on the grill later, you may want to cut your cook time down by an hour or two.

Can I stack the ribs in the slow cooker?

I try not to, so opt for the biggest slow cooker you have.

When I can, I like to place my ribs around the edge of the slow cooker, standing up on their side so that they aren’t sitting in the juices.

This results in juicy, tender ribs that still have a bit of that glorious crust and caramelization on them.

These Easy Slow Cooker BBQ Ribs couldn’t be simpler! They have a homemade spice rub and are slow cooked until they fall off the bone, then you can slather them in any barbecue sauce you like!

Ingredients

  • 2 tablespoons packed brown sugar
  • 4 teaspoons chili powder
  • 3 teaspoons seasoning salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon pepper
  • 3-4 pounds pork ribs (membrane removed)
  • ½ cup barbecue sauce

Instructions

  • In a small bowl, combine the brown sugar, chili powder, seasoning salt, garlic powder, onion powder, and pepper.
  • Cut the ribs into sections if needed for an easier fit. Rub the spice mixture over both sides of the ribs.
  • Lightly grease a 4-quart slow cooker and line the ribs up around the edges (so the meaty part is pressed against the side).
  • Cover the slow cooker and cook on low for 8 hours or on high for 4 hours.
  • Remove the ribs from the slow cooker, brush with the sauce, and grill for 5 to 6 minutes or broil for 2 to 3 minutes, until the sauce is sticky and slightly caramelized. This step is optional but adds great flavor! Serve.

This easy Hamburger Soup recipe is well-loved here — it’s hearty and chunky, but still has enough juices to justify slicing up that crusty bread. I promise you won’t regret it!

This Hamburger Soup is naturally gluten and dairy free, but be sure to wash your vegetables and check all of your labels before serving someone with food allergies.

Hamburger Soup ingredients:

  • Lean ground beef: I always use lean ground beef in soups because we don’t want all that extra fat floating around. You can swap this out for ground pork, chicken, turkey or Italian sausage if you prefer.
  • Onion: onion adds a ton of flavor! If you don’t have any onions, you can swap this for onion powder or dried onion, but fresh is best.
  • Tomato paste: tomato paste gives richness and flavor to our broth. You can swap it for a tablespoon of ketchup or a bit of tomato sauce as well
  • Seasonings: feel free to get creative with the seasonings! I stick to the basics here, but there’s no reason you can’t experiment a little.
  • Potatoes: I love potatoes in hamburger soup, and I love that they don’t get too mushy when this soup sits in the fridge all week (unlike pasta and rice). If you prefer, you can swap these out for dry pasta or dry rice, but you will want to increase the liquid as well.
  • Carrots and Celery: carrots and celery add nutritional value and delicious flavor to this soup! You can add in other or additional vegetables, such as mushrooms, peppers, zucchini, corn, and more.
  • Diced tomatoes: diced tomatoes add some sweetness to balance out the savory, beefy flavor. If you don’t like the chunks, you can opt for tomato sauce or crushed tomatoes instead.
  • Broth: I always use low sodium broth so that I can adjust the salt to our tastes. If you only have regular broth, you will want to reduce the added salt. You can also use beef broth, though I prefer the mild flavor of chicken or vegetable in this soup.
  • Frozen peas: Frozen peas add a nice pop of color and fresh flavor to this soup

Make Crockpot Hamburger Soup

This soup, like many soups, are easily made in the crock pot as well.

You will need an extra pan to brown the ground beef with the onion, but after that you can dump the beef, onion, and all the other vegetables and seasonings right into the slow cooker to cook.

You can even do this the night before and have no prep in the morning! The only vegetable that cannot be prepped ahead are the potatoes.

Let it cook on low for 8 hours or on high for 4 hours to ensure all the vegetables are tender.

  • 1 lb lean ground beef
  • 1 medium onion finely chopped

  • 1 pinch red chili flakes

  • 4 cups low sodium chicken or vegetable broth
  • 1 cup frozen peas

Instructions

  • In a large soup pot, saute ground beef and onion until beef is cooked through. Drain any resulting fat.
  • Add tomato paste, Italian seasoning, garlic, salt, pepper and chili flakes and cook and stir 1-2 minutes.
  • Add potatoes, carrots, celery, tomatoes with juice, and broth. Bring to a simmer over medium-high heat, then reduce to medium and cover.
  • Simmer over medium heat, stirring occasionally, until potatoes and carrots are tender. Stir in peas. Adjust salt and pepper to taste and serve.

Can you freeze Hamburger Soup?

You can freeze this soup, but keep in mind that the texture of the potatoes will change, therefore you may not want to.
To freeze, simply cool to room temperature and then pour into a freezer safe container (be sure to leave room for expansion).
Or, you can pour into a large freezer bag (or do smaller bags for individual servings), seal, then freeze flat. I prefer to do it this way as it freezes and thaws more quickly and is easily stacked in the freezer.

  • Onion: Adds depth and flavor to the sauce! Yellow or white onions are great here.
  • Marinara sauce: Use your favorite marinara sauce, or pick a good store-bought one. Homemade works, too, if you want extra flavor!

  • Cook on low: I really try to avoid using my crockpot on high unless I have to. Because the outer edges will already cook more quickly on low, I avoid using high because it may cause your edges to burn before the inside is cooked through.
  • Don’t stress over perfect layers: you will have to break your noodles to fit, and it won’t be perfect. Don’t worry! It’s okay if they overlap a bit or they don’t cover completely. As the noodles cook, they will expand and cover and mishaps 😉

How to store leftovers:

Store any leftover lasagna in an airtight container in the fridge for up to 3-4 days. You can also pop the leftovers in a freezer-safe container for up to 2 months. Just let it thaw in the fridge overnight before reheating!

Reheat individual portions in the microwave or cover the entire dish with foil and warm in the oven until heated through.

Ingredients

  • 375 grams Italian sausage (mild or spicy, ¾ lb)
  • 1 small onion finely diced
  • cups marinara sauce
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 9 lasagna noodles (not oven ready)
  • 2 cups shredded mozzarella cheese
  • 3 tablespoons shredded Parmesan cheese

Instructions

  • In a medium skillet over medium high heat, cook Italian sausage and onion until completely browned.
  • Stir in pasta sauce, oregano, salt and pepper.
  • Lightly grease a 2.5-4 quart slow cooker (ideally not the deep round kind, but an oval casserole one with more surface area).
  • Spread a little bit of sauce on the bottom of the slow cooker to prevent sticking.
  • Place 3 lasagna noodles in the bottom of the slow cooker, breaking to fit (save any broken pieces to fill in gaps later). Spread with ⅓ sauce, and top with ⅓ mozzarella and ⅓ Parmesan.
  • Repeat layers two more times (if you have extra sauce and noodles, you can add a fourth layer if you wish!)
  • Put the lid on and cook on low for 2.5-3 hours, until noodles are softened.
  • Turn the slow cooker off and allow to sit for 10 minutes before slicing and serving.

  • Italian sausage: you can swap the sausage for ground beef, turkey or chicken, but you may want to add additional herbs and seasonings.
  • Cheeses: you can layer some ricotta in with the mozzarella for extra cheesiness!

This recipe for Slow Cooker Chicken Thighs is a back-to-basics approach to making fall-off-the-bone, meltingly tender chicken thighs any day of the week.

I know, I know.

You might be thinking, “do we need another recipe for crockpot Chicken Thighs?”

(Especially when I’ve already written about my love for Slow Cooker Chicken Breasts).

And the answer to that question would be absolutely!

Here’s the thing: Not all recipes for chicken thighs cooked in the slow cooker are created equal.

These bone-in chicken thighs are seasoned with a savory blend of herbs and spices and seared before being added to the crockpot, which makes them incredibly flavorful and juicy.

If you’re looking for to make chicken thighs in the Instant Pot, these Instant Pot Chicken Thighs are similar in method and results, but come with a creamy garlic sauce that gets rave reviews!

How to make Slow Cooker Chicken Thighs:

  • I like to use bone-in, skin-on chicken thighs when I make this recipe. I know that some people are hesitant to use skin-on chicken thighs because they’re higher in fat, but the skin makes the chicken more flavorful and juicy.
  • Take the time to brown the chicken thighs. Work in two batches if needed. The chicken shouldn’t touch or overlap. Don’t disturb the chicken thighs as they’re browning, the skin will naturally shrink away from the pan when its reached the crispy stage.

How to Make Gravy from drippings

Whisk together 1 tablespoon of cornstarch with 1 tablespoon of water or chicken stock until it forms a slurry.

Turn the crockpot to high, stir the slurry into the remaining slow cooker liquid and whisk until the gravy thickens.

To speed things up, strain the juices into a small pot and heat on the stove until simmering, then add the corn starch.

Variations on Crockpot Chicken Thighs:

  • Add potatoes. Since we’re using bone-in chicken, you can add some baby potatoes or chopped potatoes and they’ll cook in about the same amount of time.
  • Add vegetables during the last hour of cooking. Fresh or frozen such as carrots, peas, corn, broccoli, and sweet pepper strips can be added during the last hour or half hour before the crock pot timer goes off.
  • Make Tex-Mex slow cooker chicken thighs. Replace the herbs and spices called for in the original recipe with a packet of taco seasoning. Serve with this Instant Pot Brown Rice!
  • Brush chicken thighs with barbecue sauce. For even crispier skin, run the chicken under the broiler until the barbecue sauce begins to bubble before serving.

Can I use Boneless, Skinless Chicken Thighs?

Definitely! You can swap for the same amount of boneless, skinless chicken thighs, just reduce the cook time by half — about 2.5-3 hours on low will do it.

Skip the browning, season and add them right to the slow cooker.

How to store leftover Crockpot Chicken Thighs:

In the refrigerator, cooked leftover slow cooker chicken thighs can be stored in a resealable container for 3-4 days.

To freeze leftover chicken thighs, remove meat from the bone and store in a resealable freezer bag for up to 4 months for optimal freshness.

To defrost cooked chicken thighs transfer to the fridge and allow to thaw overnight before using.

Perfectly Juicy Slow Cooker Chicken Thighs

Ingredients

  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 6-8 bone in, skin on chicken thighs
  • 1 tablespoon oil
  • 1/4 cup low sodium chicken broth

Instructions

  • In a small bowl, combine parsley, garlic, salt, pepper, onion powder and paprika. Rub over the front and back of the chicken thighs.
  • Heat oil in a large pan over medium heat.
  • In two batches, brown chicken, skin side down, in hot pan. This will take 2-4 minutes.
  • Pour chicken broth in the bottom of a 2.5-4 quart slow cooker and add chicken thighs, skin side up, trying not to overlap chicken if possible. (If you have to, that is fine, they may just take a little longer to cook through)
  • Put the lid on and cook on low for 5-6 hours or high for 3 hours, until a meat thermometer reads 165 degrees F in the thickest part.
  • Serve.

Notes

Boneless Skinless Chicken Thighs: you can swap for the same amount of boneless chicken thighs — just skip the browning and add them straight to the slow cooker. Cook on low 2.5-3 hours.
Make a gravy out of the liquid drippings left in the slow cooker. Whisk together 1 tablespoon of cornstarch with 1 tablespoon of water or chicken stock until it forms a slurry.   • Russet potatoes: Feel free to use whatever kind of potatoes you like. I use russet potatoes, but Yukon gold potatoes or baby potatoes would also be perfect! If they have a smooth skin you don’t even need to peel them.
  • Low sodium chicken broth: This is the liquid that helps cook the potatoes. You could also use chicken stock for a richer flavor. 
  • Half and half, milk or cream: This makes the mashed potatoes super creamy!
  • Unsalted butter: Gives the potatoes a velvety texture and a little flavor. 

How to make mashed potatoes in the crockpot:

  • Place cubed potatoes in a slow cooker. Add broth, salt, and pepper, then stir.
  • Cover and cook on the low setting until potatoes are tender.

Store leftover potatoes in an airtight container for 4-5 days. Reheat on the stovetop or in the microwave. You may need to add a little cream or butter to get them nice and creamy again!

Can I freeze crockpot mashed potatoes?

Yes! Place leftovers in an airtight container and pop in the freezer for up to 2 months. Let the potatoes thaw in the fridge overnight before reheating on the stovetop or in the microwave. Keep in mind that the texture may not be as creamy after thawing.

Can I make these mashed potatoes on the stove top?

You can absolutely make these mashed potatoes on the stovetop, but if you have a few hours, I definitely encourage you to make these in the crockpot because they are just so easy!

You can make them on the stovetop in much the same way as the recipe calls for: simmer with chicken or vegetable broth and seasonings until tender, then smash away and add in anything your heart desires (or nothing at all!).

Crockpot Chicken Tips:

These recipes call for both chicken breasts and thighs. Here are some tips for how to choose which ones to use!

  • Chicken Breasts: These are lean and absorb flavors well but can dry out if overcooked. Cook smaller pieces for about 2 hours on low; whole breasts take 3–4 hours on low or 2 hours on high. Leaving them whole during cooking helps retain moisture.
  • Chicken Thighs: Thighs are juicier and better suited for longer cook times due to their higher fat content. Use boneless thighs for quicker cooking or bone-in thighs for richer flavor, but remember bone-in requires more time.
  • Substitutions: You can replace thighs with breasts in recipes, but adjust the cooking time accordingly to prevent dryness. Keep in mind that breasts won’t stay as moist as thighs during extended cooking.

Can you use frozen chicken in the crockpot?

It is actually not recommended to cook frozen chicken in the crockpot because it sits at that “not cold enough but not hot enough” in-between temperatures for too long in the slow cooker.

However, I’ve used frozen chicken breasts, added a few extra hours of cook time, and been fine! It’s up to you.
