Basil Pesto is an Italian condiment made with fresh herbs and packed with nutty flavor used for pasta recipes, as a sandwich spread, or even to top chicken or steak!

Although it might seem a bit gourmet, it’s actually super easy to make from scratch and tastes so much better than store-bought pesto.

This recipe comes together in 5 minutes and can even be frozen for later if you don’t use it all.

Why we love this Basil Pesto:

  • Quick: This recipe comes together in just 5 minutes!
  • Fresh: Fresh basil, garlic, and parmesan cheese add so much flavor that rivals anything you’ll find at grocery stores.
  • Freezer-friendly: You can freeze any extra for later to use in your favorite recipes.

Homemade Pesto recipe Ingredients:

ingredients needed for homemade basil pesto in bowls.
  • Olive oil: Extra-virgin olive oil will give you the best flavor, but any kind of cooking oil will work, too.
  • Fresh basil leaves: Use large, fresh basil leaves. You will need around 2 cups of basil, so make sure to get plenty!
  • Parmesan cheese: Adds a salty, savory kick. Freshly grated is best.
  • Pine nuts: Classic for pesto, but almonds or walnuts work too.
  • Garlic: Fresh garlic cloves add a bold, aromatic punch.

How to make the best Basil Pesto recipe:

If you have 5 minutes, you can easily make this classic Basil Pesto recipe! Make sure to check out the recipe card for the full list of recipe instructions.

  • Add the olive oil, basil, Parmesan, nuts, and garlic to a blender or food processor.
  • Blend until everything is smooth and creamy.

Variations and Substitutions

  • Toast: Toast the pine nuts for a depth of flavor.
  • Swap the cheese: Use pecorino Romano for a more intense flavor.
  • Make it nut-free: Swap the pine nuts for sunflower seeds instead!
  • Add freshness: Add a splash of lemon juice for a bit of brightness.
  • Kick of heat: Sprinkle some red pepper flakes for a bit of heat.

How to store fresh Basil Pesto:

Store leftover pesto in an airtight container in the fridge, where it’ll stay fresh for about a week.

For longer storage, freeze it in small portions, like ice cube trays, and thaw as needed!

How do I keep Pesto from turning brown?

Pesto can darken due to oxidation, but you can keep it vibrant by adding a thin layer of olive oil on top before storing it in the fridge.

Another trick is to blanch the basil leaves for a few seconds in boiling water, then quickly cool them in ice water before blending.

What is rhubarb?

As it turns out, Rhubarb is considered a spring vegetable.

Rhubarb stalks are sold in grocery stores and farmer’s markets across the U.S. – generally from April to June when the stalks have the sweetest flavors. Rhubarb stalks are green, pink, or red in color, like celery but prettier. The redder the stalk the sweeter the flavor!

Rhubarb is often confused with fruit since it’s sometimes used in sweet recipes like pies, cobblers, tarts, and other dessert treats.

What does rhubarb taste like?

Rhubarb is a fibrous vegetable similar to celery but without the crispness. The texture of rhubarb is more like a bite into a walnut: smooth with a slight crunch. Typically, the stalks are sliced into bite-sized pieces for baking. When properly cooked, rhubarb gives recipes like pies and cobblers a delicious and gentle tartness.

However, eaten raw, rhubarb is extremely bitter and sour. This is why many rhubarb desserts will include other ingredients to soften, sweeten, or balance the flavors (strawberries and sugar are common go-tos).

Watch Out for the Leaves!

To clear up a common misconception: rhubarb stalks are not poisonous. It’s the leaves at the top of the stalks, however, that are extremely toxic to humans and should never be consumed.

Before preparing your rhubarb, cut and discard the leaves. Only use the stalks for eating. The leaves are not edible – at all – and should not be used for garnish or in any way touch the food.

How to store rhubarb:

You have a couple of methods for storing rhubarb in the fridge and freezer!

Fridge

Fresh rhubarb will last up to one week in the fridge wrapped in plastic wrap! Just make sure you cut off the toxic leaves first.

Freezer

Rhubarb freezes like a dream! This is especially handy if, like me, you’re on a mission to try any and all fruit and rhubarb combinations, all year-round. Your freezer is your friend!

I recommend cutting the stalks into pieces to store airtight in the freezer. Here’s how to freeze fresh rhubarb:

  1. Slice the rhubarb and place it in a single layer on a parchment paper-lined baking sheet.
  2. Place the whole sheet in the freezer until the rhubarb pieces are frozen solid.
  3. Transfer the frozen rhubarb to resealable bags or containers labeled with contents, amount, and recipe details as needed (ie. “2 cups rhubarb, muffins/scones”).

While it’s easy to freeze, rhubarb does tend to turn mushy after defrosting. This makes frozen rhubarb best to use in recipes where it can be added in and then cooked or baked from frozen, such as baking and sauces.

Make your own homemade Taco Seasoning with this simple recipe! It’s healthier than the store-bought stuff, saves money, and is perfect for all types of Mexican recipes.

glass bowl with spoon and taco seasoning.

This Taco Seasoning recipe is perfect for using in this Taco Meat recipeTaco DipDorito Taco Salad, and this One Pot Taco Pasta Recipe!

Unlike store-bought Taco Seasoning, this spice blend doesn’t contain any cheap fillers or food colorings, so you can feel good about putting it in your body. You only need 5 basic spices plus salt and pepper to make it!

It’s so easy to throw together, too. All you have to do is measure out your ingredients and stir. It’s that easy!

Why we love this Taco Seasoning blend:

  • Quick: The entire recipe can be made in 5 minutes, so it’s perfect for whipping up when you want to make a Mexican-inspired dish!
  • Customizable: You can adjust the spices to your preferences and even add other spices to get your desired flavor profile.
  • Great flavor: The unique blend of spices produces an aromatic flavor profile that gives life to your Mexican dishes!

DIY Taco Seasoning ingredients:

ingredients needed for taco seasoning in bowls.
  • Garlic powder: adds garlic flavor to the seasoning. Make sure you grab the powder and not granulated garlic or garlic salt.
  • Chili powder: it’s moderately spicy and made with a blend of red chilis and other spices.
  • Cumin: adds an earthy, nutty, and slightly smoky flavor.
  • Salt and pepper: just a bit of each to round out the flavors.
  • Onion powder: adds onion flavor.
  • Paprika: adds a sweet and peppery taste. For a smokier flavor, use smoked paprika!

How to make your own taco seasoning from scratch:

Making your own taco seasoning couldn’t be easier! For the full list of instructions, scroll down to the recipe card.

  • Stir together all the ingredients.
  • Store in an airtight container or mason jar until ready to use or use immediately.

Variations and Substitutions

  • To make spicy taco seasoning, add a pinch of cayenne pepper for a slight kick!
  • If you like a little sweetness, I love adding brown sugar to the mix, but only right before cooking, as it clumps in storage.
  • Need a low sodium option? Cut back on the salt in this recipe!

Recipe Tip

Make a big batch for larger recipes or as extra so you never run out!

Jut add 1-2 tablespoons per pound of meat according to your tastes.

How to store homemade Taco Seasoning mix:

Store in an airtight container or glass jar in a cool, dark place at room temperature until ready to use. It should last for around 6 months!

How do I use this seasoning?

Use 1-2 tablespoons for each pound of ground meat. You can use this spice blend with various kinds of meat, such as ground turkey, ground chicken, and ground beef!

  • ½ tablespoon salt

Instructions

  • Stir together all ingredients.
  • Store in a dry, cool place until ready to use, or add 1-2 tablespoons to each pound of meat.

Notes

Optional additions:
  • Brown sugar: I like to add a touch of brown sugar to this mix for a little sweetness, especially for chicken or pork tacos (and serve with a fruity salsa). However, I find the sugar clumps with storage so I’ll do this just before adding to the meat:
  • Cayenne: for extra kick, add ¼ teaspoon cayenne pepper to the mix.
Make a larger batch:
This recipe makes roughly ⅓ cup or enough for 2-4 pounds of meat (depending on how much you add to each batch according to your preferences). You can easily make a larger batch by multiplying each ingredient — multiply times 3 to make one cup of seasoning.

Yes, this really is the BEST Homemade Spaghetti Sauce! Once you make this robust meat sauce you’ll never go back to the store-bought stuff again. It’s got the perfect amount of tomatoes, herbs, seasonings and beef to really hit the spot!

Enjoy the very best spaghetti dinner with more easy recipes like Slow Cooker Spaghetti Sauce, Spaghetti and Meatballs and Chicken Spaghetti.

large pot filled with spaghetti sauce being scooped out.

In my house, we’re pretty much always in the mood for pasta! Specifically, spaghetti with meat sauce. This is one of my go-to dinner recipes that never fails to hit the spot – it’s filling, flavorful, and made from scratch with lots of love.

Whether this is your first time making spaghetti sauce from scratch, or you’re just looking for some new ideas, I got you.

This recipe is made in just one pot with a handful of bold ingredients! This sauce recipe requires just 10 minutes of prep, and after that it all just melds together in under an hour.

You can also customize this recipe in a number of ways. Scroll down to my variations section for some inspiration! Consider this spaghetti meat sauce as a base that you can build off of however you’d like.

Why we love this Spaghetti Sauce Recipe:

  • One Pot: Yes! One pot recipes truly are the best. Easy to make and even easier to clean up when you’re done!
  • Meaty: Both ground beef and Italian sausage make each bite deliciously hearty and filling.
  • Classic: You won’t find any unnecessary frills here. It’s just a classic meat sauce that always hits the spot on spaghetti night!
  • Hassle Free: Life is busy! This hassle free recipe requires just 10 minutes of fail-proof prep work on your part.

Spaghetti Sauce Ingredients:

ingredients needed for homemade spaghetti sauce in bowls and plates.
  • Ground Beef and Sausage: You can use any kind of ground meat in this spaghetti sauce recipe, including ground turkey or chicken. If you swap out the Italian sausage, you’ll want to supplement with additional herbs and spices.
  • Crushed Tomatoes: I like smooth crushed tomatoes in my spaghetti sauce. For a chunkier texture you can use diced tomatoes instead, or half of each.
  • Onion: A yellow or white onion will both get the job done.
  • Sugar: You can omit this if you want. Just note that the purpose of this ingredient in spaghetti sauce is to balance the acidic tomatoes.
  • Garlic: Add more or less according to your level of garlic love!
  • Salt and Pepper: You can add more or less to taste. I recommend starting small and adding more as needed.
  • Herbs: I use a blend of Italian seasoning, dried parsley and dried oregano to create the very best herbaceous flavor.

How to make Spaghetti Sauce:

Take a quick look at just how easy this one pot spaghetti sauce recipe really is! For more information on the step by step instructions, just scroll down to the recipe card below.

  • Heat a large dutch oven over medium-high heat. Add the ground beef, Italian sausage and onions. Cook until browned and onion is translucent.
  • Stir in garlic, Italian seasoning, salt, parsley, oregano, and pepper.
  • Add the crushed tomatoes and water or broth. Bring to a simmer.
  • Cover, reduce heat and simmer until the flavors come together — the timing is flexible here! If you can let it go a little bit longer, it will be even more flavorful.

Variations and Substitutions

  • Make it meatless: instead of ground meat, you can sauté some finely chopped carrots, celery and other vegetables with the onion, then add the rest of your sauce ingredients and simmer. You’ll have a hearty, meatless meal that’s full of nutrients!
  • Herbs and seasonings: Feel free to get creative! If it’s summer and fresh herbs are in abundance, definitely swap those in for a boost of flavor.
  • Make it spicy: Mix in some crushed red pepper flakes to really turn up the heat!

Can I make it in the crockpot?

Absolutely!

This recipe is inspired by my Slow Cooker Spaghetti Sauce recipe, so you can find all the details over there.

How to store Spaghetti Sauce

Store any leftover spaghetti sauce you may have in an airtight container in the fridge for about 3-4 days.

Can I freeze Spaghetti Sauce?

Yes! This is a great freezer-friendly recipe. Let the sauce fully cool to room temperature prior to freezing in an airtight container for up to 3 months. When you’re ready to serve it, let it slowly thaw in the refrigerator for a few hours prior to reheating.

Notes

Ingredients and Substitutions:
  • Ground Beef and Sausage: you can use any kind of ground meat in this spaghetti sauce recipe, including ground turkey or chicken. If you swap out the Italian sausage, you will want to add additional herbs and spices.
  • Herbs and Seasonings: this is an easy recipe to customize to your tastes, so add more or less of the seasonings as you see fit.
  • Crushed tomatoes: I like smooth crushed tomatoes in my spaghetti sauce, but for a chunkier texture you can use diced tomatoes instead, or half of each.
  • Tasty additions: want to add a little pop of flavor? Try a spoonful of basil pesto, a parmesan rind or some red chili flakes.

Meet your new favorite pasta sauce! Roasted Tomato Sauce is exactly as flavorful as it sounds 😉

When you roast tomatoes, you really bring out the rich, mouthwatering flavors of the fruit. Also, yes – tomatoes are a fruit, not a veggie.

Onions and garlic are roasted alongside the tomatoes to tender perfection, then they’re all tossed into a blender with some other delicious additions like tomato paste and fresh basil.

This homemade tomato sauce recipe is a go-to of mine, especially during the summer when I really crave the taste of fresh tomatoes!

Why we love this Roasted Tomato Sauce Recipe:

  • Budget Friendly: Tomatoes, an onion, fresh garlic, tomato paste, basil, a drizzle of olive oil and just a little salt and pepper. That’s all you need to make this homemade sauce!
  • Easy: Roast, blend, enjoy! That’s how simple this pasta sauce recipe is to make from scratch.
  • Flavorful: Roasting the tomatoes and onions really brings out the most incredible flavors. This sauce is anything but bland.
  • Natural: You won’t find any unnecessary ingredients here. The key is to bring out the natural flavors of the tomatoes with just a few other fresh ingredients.

Roasted Tomato Sauce Ingredients Needed:

ingredients needed roasted tomato sauce in bowls.
  • Tomatoes: Roma tomatoes are my favorite because they’re super flavorful and not quite as watery as some other tomatoes.
  • Fresh Basil: You can sub fresh basil for a teaspoon of dried basil or even basil pesto.
  • Tomato Paste: This helps to develop the rich tomato flavor even more, and it also does wonders for the consistency.
  • Olive Oil: Avocado oil also works well if preferred.
  • Garlic: Fresh garlic cloves are best, and you can add them minced or whole. As always, feel free to measure with your heart!
  • Onion: A yellow or white onion will both get the job done.
  • Salt & Pepper: Add more or less to taste.

How to make Roasted Tomato Sauce:

Take a sneak peak at how easy this tomato sauce recipe really is! For more in depth notes about ingredient measurements and step by step instructions, scroll down to the recipe card at the bottom of the page.

  • Halve the tomatoes and place them cut side up with the onions and garlic on a prepared baking sheet. Drizzle with oil and sprinkle with salt and pepper. Toss to coat.
  • Roast at 400°F for 40-50 minutes.
  • Add everything to a blender and toss in the basil, tomato paste, and sugar. Puree until completely smooth and adjust seasonings to taste.

Recipe Tip

For a richer, creamier flavor, add some heavy cream and/or parmesan to the blender as well!

Tomato Sauce Variations and Substitutions

  • Vegetables: You can add other veggies to the baking sheet! Carrots and celery would both roast well and blend with the other ingredients. This would be a great way to sneak some nutrients onto a picky eater’s plate!
  • Herbs: Basil is my favorite choice. Other fresh herbs also work well, like dill, parsley, oregano or thyme (pull it off the stem).
  • Make it spicy: Cayenne or red pepper flakes can be added to the blender for a touch of spice. Keep in mind that a little goes a long way!
  • Cream: Just a splash of heavy cream or evaporated milk can take this simple, fresh sauce to a decadent creamy consistency.
  • Parmesan: Freshly grated parmesan adds a nice salty and cheesy flavor. Feel free to toss some in if you have it on hand!

How to store Roasted Tomato Sauce

Store your roast tomato sauce in an airtight container in the fridge for about 1 week. The best way to reheat it is by mixing it with hot freshly cooked pasta!

Can I freeze Roasted Tomato Sauce?

Sure thing! Just let it fully cool to room temperature first, then freeze in an airtight container for up to 3 months. Don’t forget to date and label! When you’re ready to enjoy it, let it first thaw in the refrigerator for a few hours or overnight.

Serve this homemade tomato sauce recipe with your favorite pasta! Spaghetti is usually my go-to, but really any pasta works well here.

wooden ladle in a pan of alfredo sauce topped with chopped parsley.

This easy Alfredo Sauce is one of my favorite pasta sauce recipes! It’s such a basic recipe that’s fail-proof and always satisfies. Plus, it uses inexpensive staple ingredients that I always keep on hand!

After I first made this alfredo sauce recipe years ago, I never went back to the jarred stuff again. The real deal is SO easy to make and the difference in flavor and consistency is huge.

Next time you have a hankering for your favorite creamy white sauce, this is the recipe to turn to!

pasta and tongs in steel pan of alfredo sauce.

We love it on these Chicken Bacon Alfredo Potato Skins, this Chicken Alfredo Pizza or in these Chicken Alfredo Quesadillas!

Why we love this Easy Alfredo Sauce recipe:

  • Budget Friendly: If you take a quick look at the ingredients listed below, you may notice something… there’s barely anything there! This easy Alfredo recipe comes together with simple ingredients that you may already have.
  • Picky Eater Approved: I can always count on this alfredo sauce to get eaten up by even the pickiest eaters at the table. It makes dinner with little ones so much easier!
  • Homemade: Trust me, the jarred sauces can’t come close to the real deal. This Alfredo sauce recipe is made from scratch and you can tell by both the flavor and consistency!
  • So Easy: One pan, basic ingredients, and about 15 minutes of your time… that’s all you need to make the very best Alfredo sauce. It’s truly a foolproof recipe that always gets the job done. I love this creamy sauce!

Alfredo Sauce Ingredients:

ingredients needed for easy alfredo sauce in bowls.
  • Cream: Heavy whipping cream is the only cream to use for alfredo sauce. A lighter cream will not reduce naturally while it simmers and won’t have as rich of a flavor. If you need to use a low fat cream, whisk it with a tablespoon of cornstarch before using to thicken it.
  • Parmesan: Try to use freshly grated parmesan cheese right off the block for the best flavor and consistency.
  • Butter: I recommend using unsalted butter. That way, you can add the desired amount of salt to taste and better control the amount of sodium in your sauce.
  • Garlic: Measure with your heart! I recommend using fresh garlic as opposed to pre-minced or dried in this pasta dish.
  • Salt and Black Pepper: These can both be measured to taste. If you use salted butter, you may want to omit the extra sprinkle of salt.
  • Parsley: This gives an extra pop of vibrant color and herbaceous taste that’s so nice! I recommend using fresh parsley for the very best flavor, not dried.

How to make Alfredo Sauce:

Take a quick look at how easy it is to make homemade Alfredo sauce! For more details about the ingredient measurements and the step by step process, scroll down to the recipe card at the bottom of the page.

  • Heat a medium saucepan over medium heat and add butter. When the butter is melted, add minced garlic, parsley, salt, pepper and cook 2 minutes until fragrant.
  • Stir in the heavy cream.
  • Bring to a gentle simmer. Cook for just 10-20 minutes, stirring often, until thickened slightly.
  • Stir in parmesan cheese and parsley. Taste and add seasonings if desired.

Variations and Substitutions

  • Parmesan and Garlic: You can certainly measure both the parmesan and garlic with your heart! Add more or less as you see fit.
  • Swap the cheese: another hard, flavorful cheese will work great! Try Grana Padano, Romano or Asiago are delicious as well.
  • Seasonings: Alfredo sauce really doesn’t need too many seasonings to make it shine. If you’d like to sprinkle anything else in the mix, a little garlic powder (to really double down on that garlicky goodness) or some Italian seasoning go a long way.
  • Make it Cajun: add a teaspoon of Cajun seasoning to the mix for extra kick!

How to store Easy Alfredo Sauce

This alfredo sauce is best served right after it’s prepared! The fat can separate when cooled and reheated. If you do need to reheat it, just toss it with some hot freshly cooked pasta for best results and avoid the microwave.

Can I freeze Alfredo Sauce?

Yes! Just note that the fat will likely separate. Freeze alfredo sauce for up to 3 months in an airtight container and let it defrost in the refrigerator. See notes above for how to best reheat with fresh hot pasta!

tongs grabbing pasta out of pan of easy alfredo sauce.

Serving suggestions:

Serve your alfredo sauce the way it should always be served – with lots of fettuccine noodles!

I love plating this creamy pasta next to a Juicy Air Fryer Chicken Breast or this Baked Chicken Breast if you don’t have an air fryer! Baked Chicken Thighs are also a huge hit with this pasta! You can also add some Homemade Meatballs to the mix for a boost of protein.

Of course, I really love rounding out my plate with some veggies like Air Fryer Broccoli and Roasted Vegetables.

  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • cups heavy whipping cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  • Heat a large saucepan over medium heat and add the butter.
  • When the butter is melted, add the garlic, dried parsley, salt, and pepper and cook for 1 to 2 minutes, until fragrant.
  • Stir in the cream and bring to a low simmer. Cook for 10 to 20 minutes, stirring frequently, until slightly thickened. (The longer it cooks, the more it will reduce and thicken.)
  • Stir in the Parmesan and as much fresh parsley as desired. Taste and adjust seasonings before serving.

Notes

This recipe makes roughly 2 cups of sauce or 8 ¼ cup servings.
Ingredients and Substitutions:

This is my very best Chicken Marinade recipe! It’s sweet, tangy, and is the most foolproof way to ensure your chicken is tender and juicy. The best part is how the marinade thickens into the most mouthwatering sticky sauce! Instructions also included for pan frying and baking.

I bet this sweet and tangy marinade will become your go-to recipe whenever your family is in the mood for grilled chicken.

Made from only a handful of ingredients, this recipe makes a marinade that will transform chicken breasts or thighs into something truly crave-worthy! Plus, it’s not spicy at all, so it’s great for the whole family.

With that being said, you can make it spicy if you’d like. It’s super versatile and the ingredients are easy to adjust to your liking.

Reader Rating

“We loved this. Next time, I will double the marinade to have more to reduce to the glaze. Just loved the glaze.” Judith

Add your review

Why we love this Chicken Marinade:

  • Tender: When you marinate chicken with something acidic like balsamic vinegar, it acts as a tenderizer!
  • Flavorful: Ketchup, honey, garlic and balsamic vinegar blend together to create the best mixture of flavors.
  • Saucy: This marinade doesn’t just go away after the meat’s done marinating. I like to heat it in a sauce pot to thicken it, then use it to glaze the chicken.

Chicken Marinade Ingredients Needed:

ingredients needed for grilled chicken marinade in bowls and plate.
  • Chicken – I love using boneless chicken breasts for this recipe, but you can really use any cut of chicken you like best or even pork tenderloin!
  • Salt and Pepper
  • Ketchup – Any brand will get the job done. The way it compliments both the sweet and tangy ingredients in the mix is amazing!
  • Honey – Honey adds just the right amount of sweetness. It also helps to create the best thick glaze-like consistency.
  • Oil – Use a neutral oil, like canola or vegetable.
  • Garlic – fresh is best!
  • Brown Sugar – If you’re in a pinch, just combine one cup of white granulated sugar with one tbsp of molasses.
  • Balsamic Vinegar – This adds flavor and helps to tenderize the chicken meat.

How to make Chicken Marinade

Here’s a quick look at how to make the best grilled chicken marinade! For more details about ingredients and instructions, scroll down to the recipe card.

  • Combine all of the marinade ingredients in a bowl/measuring cup.
  • Place the chicken in a zip-top bag. Pour half of the marinade onto the chicken. Marinate for 30 minutes up to 4 hours.

Recipe Tip

For best results, I like to marinate chicken for at least 30 minutes and up to 4 hours. Although it’s technically considered food safe to marinate chicken for up to 24 hours, the acid in the marinade — in this case the balsamic vinegar and ketchup — will cause the texture of the chicken to deteriorate. In other words, your chicken will turn out stringy and tough (or even worse, mushy).

  • Add the chicken to the hot grill. Cook for 5-7 minutes per side or until the internal temperature reaches 165°F.
four grilled chicken breasts in black pan.

Variations and Substitutions

  • Try an Asian-inspired version of this marinade by using hoisin sauce and a splash of soy sauce instead ketchup, rice vinegar, and 1 teaspoon sesame oil. Sprinkle the finished grilled chicken with sesame seeds before serving.
  • Love Tex-Mex? Make your own south-of-the-border marinade by substituting ¼ cup of lime juice for the balsamic vinegar and bottled chili sauce for the ketchup. Add ½ teaspoon ground cumin and a pinch of dried chili flakes to the marinade if desired.
  • If your family is a fan of spicy flavors you can add your favorite hot sauce to the marinade. Begin with a small amount, tasting as you go, until the marinade has just the right amount of kick to it.

How to store Grilled Chicken

Once the chicken has been grilled, you can store it for about 3-4 days in the fridge! Reheat in the air fryer or oven for the best results, or slice it for wraps and salads.

Can I freeze Chicken Marinade?

Yes!

  1. Spoon half of the marinade into a resealable freezer bag — since half of the marinade in this recipe is reserved for the glaze, you can reserve the extra marinade in a separate container to make the glaze, or you can prep two servings of chicken for the freezer.
  2. Add the chicken to the bag.
  3. Rub the marinade into the chicken.
  4. Seal and freeze for up to 9 months.
  5. To thaw frozen marinated chicken: remove chicken from the freezer and let thaw overnight in the refrigerator before using.

What’s the best chicken to use in this recipe?

  • Boneless skinless chicken breasts are my first choice when I make this recipe. I find that the marinade adds tons of tangy flavor while keeping the chicken moist and tender. I also like the fact that chicken breasts are a nutritious, lean source of protein that my whole family enjoys.
  • Boneless skinless chicken thighs will work well with this marinade and they’re also an economical alternative to chicken breasts. With a slightly higher fat content than chicken breasts, chicken thighs are extra-flavorful and juicy by nature.
  • Bone-in skinless chicken breasts are another delicious pairing for this marinade! To grill bone-in chicken breast, the total grilling time will need to be increased on either side (bone-in chicken doesn’t radiate heat as efficiently as boneless breasts) — please use a meat thermometer to ensure your chicken breasts are cooked through before consuming!
  • This marinade can also be used with chicken wings, drumsticks, and skin-on chicken breasts and thighs.
white plate with sliced chicken breast on.

Can I use this chicken marinade to bake or pan fry chicken?

Yes! And it’s so easy to do. Check it out:

How to bake chicken with marinade:

  1. Preheat the oven to 375°F.
  2. Line a rimmed baking sheet with parchment paper and spray with non-stick spray. Transfer chicken breasts to the prepared baking tray, discarding used marinade.
  3. Bake chicken breasts for 20 minutes (or until a meat thermometer registers 165°F at the thickest part of the breast — the cook time will depend greatly on the size of your chicken breasts!).
  4. Thicken marinade according to recipe directions and serve with baked chicken breasts.

To pan fry chicken with marinade:

  1. Heat a non-stick skillet over medium-high heat. Alternately, spray a regular skillet with non-stick spray to coat.
  2. Add chicken breasts to the hot skillet and pan fry, covered, for 5 minutes per side.
  3. Reduce the heat to medium and add the remaining marinade to the pan with the chicken breasts.
  4. Cook for another 3-4 minutes, coating the chicken with the marinade until it begins to thicken. Serve chicken with thickened sauce on the side.

jar of enchilada sauce with spoon scooping some out.

This is our favorite homemade enchilada sauce recipe, and it’s way better than the canned stuff!

We make all sorts of enchiladas around here. We love beef enchiladas but sometimes make them with pulled pork or shredded chicken too (like these tasty Easy Chicken Enchiladas!).

Whatever meat or filling you choose, you can’t beat a homemade sauce made with basic pantry staples.

This is a bit different from other from-scratch recipes as there is no cooking involved at all. It’s an easy recipe – simply put all the ingredients in a bowl and stir!

The sauce will cook through when it is heated in the dish, melding the flavors together and saving you time and energy!

If you love Mexican food, try some of our other favorite recipes like this Classic Three Bean Chili, this Easy Taco Soup, and my delicious Sheet Pan Fajitas.

We also like Cordon Bleu Chicken Enchiladas, which are made with Alfredo sauce instead of tomato sauce for a creamy enchilada dinner.

Finish it off with my Strawberry S’mores Enchiladas for dessert!

Ingredients Needed:

ingredients needed for enchilada sauce recipe.
  • Tomatoes: use canned crushed tomatoes for this sauce, with no added salt. Plain, unseasoned tomato sauce will work as well.
  • Water: simply thins out our sauce to our desired consistency. You could swap for chicken or vegetable broth for added flavor.
  • Seasonings: garlic powder, onion powder, dried oregano, and kosher salt will make a flavorful enchilada sauce.
  • Spices: use cumin and chipotle powder (or smoked paprika), as well as ground cinnamon for an added warm flavor. Add in some cayenne pepper too for a spicy sauce.
  • Sugar: brown sugar will help to balance the acidity of the tomatoes if needed.

Enchilada Sauce FAQs

What can I use in place of enchilada sauce?

If you don’t have enchilada sauce ready made, this is a great recipe to use. There’s no cooking or heating involved to make it, so it’s ready to go into your Mexican dishes in no time! You can often use Taco sauce in place of enchilada sauce, and salsa is a good substiture too.

How do I store enchilada sauce?

Store homemade enchilada sauce in an airtight container in the refrigerator for up to 2 weeks. Allow it to cool to room temperature before putting it in the fridge.

Can I freeze enchilada sauce?

You can freeze this red enchilada sauce in a freezer-safe container or Zip-loc bag for up to 6 months. Since it is so simple to prepare, I don’t usually bother freezing it, but I make sure to have a good supply of canned crushed tomatoes in the pantry so I can make it as and when I need it.

large glass measuring cup of enchilada sauce with whisk.

Tips and Notes

  • Simmer the sauce on the stove to bring the flavors together before using it if you prefer.
  • As this sauce doesn’t require any cooking, I tend to make it as and when I need it. It is a super simple recipe to double or triple for a big batch, and it will last up to 2 weeks in the fridge!

Enchilada Sauce Variations

  • Make a green enchilada sauce. Use chopped green chilis and jalapeños instead of canned tomatoes as the base and adjust seasonings to taste.
  • Spices and seasonings: Make this recipe your own by adjusting the seasonings to your preference. You can taste as you go.
  • Add some heat. Adding red pepper flakes, chili powder, or finely chopped jalapeños depending on your desired spice level.
  • Fresh ingredients. Use fresh garlic that you have minced yourself if you prefer.
  • Tomatoes: canned crushed tomatoes are my shortcut here, as many recipes use a mixture of tomato paste and water thickened with flour. Use 3 tablespoons of tomato puree paste and 2 additional cups of water or low-sodium vegetable broth. Add a cornstarch slurry to the mix, and cook it on the stovetop or in the microwave to thicken it.

This Cheese Sauce is one of those basic and simple yet incredibly delicious recipes that’s just good to know. Why? Because it is so darn versatile!

Whether you’re wanting an extra cheesy pasta, a big plate of cheesy nachos, a way to dress up your Roasted Veggies or Air Fryer Broccoli, or maybe even just a big bowl of plain cheese sauce to slurp down like soup (just me?), this 15 minute, 6-ingredient recipe has you covered!

Keep this sauce as-is or customize it with different spices and add-ins!

Make it an extra cheesy night with this Cheese Ball recipe or cheesy Taco Dip!

Ingredients Needed:

  • Butter: I always use unsalted butter so I can add salt to taste.
  • All-Purpose Flour: whisked into the butter to make a roux which helps thicken the sauce.
  • Milk: any kind of milk will work. The richer the milk, the richer the sauce.
  • Shredded Cheese: I keep it classic with shredded cheddar, but other types of melty cheese will work too. Whatever you do, shred your own!
  • Salt and Pepper: or other seasonings to taste.

Homemade Cheese Sauce FAQs

What is a Cheese Sauce made of?

Homemade cheese sauce consists of cheese, milk, a roux made up of butter and flour, and the seasonings of your choice. It’s incredibly simple and so delicious!

What is a good melting cheese for sauce?

I love to keep it classic with sharp cheddar, but any melty cheese works great. Try Asiago, white cheddar, fontina, gouda, gruyere, havarti, Monterey jack, mozzarella, you name it. You can even use a combination. Whatever you do, shred the cheese yourself! Pre-shredded cheese includes anti-caking agents which prevent it from melting smoothly.

How to store:

Leftover sauce will last in an airtight container in the fridge for up to 2 days. To reheat, warm in the microwave or on low on the stove until heated through. You may want to add a splash of milk or water to thin the sauce when reheating.

Tips and Notes

  • Shred your own cheese! Freshly shredded cheese is the key to a smooth and creamy texture. Pre-shredded cheeses contain an anti-caking agent that can result in a gritty texture.
  • Heat on low. It can be tempting to crank the heat up in the hopes that the cheese melts faster. I get it. But cooking on medium/low allows the cheese to melt without clumping. It’s worth the extra time. Trust me!
  • Lighten it up. If you want to make a lightened up version, swap the cream out for half chicken broth and half milk or cream. It won’t be quite as rich, but will still be delicious.
  • Play with flavor. This recipe is basic for a reason. So you can play around with it! Add 1/2-1 teaspoon of taco seasoning or chili powder to make nacho cheese sauce, spice it up with cayenne pepper, chili peppers, or diced green chiles, kick the heat up with a drizzle of hot sauce…you really can’t go wrong!
